CARROTS - Carrots are high in Vitamin A which promotes growth, helps the eyes see light and color, prevents dryness of the skin and eyes, maintains the digestive and urinary tracts and helps the body resist bacterial infections. Carrots contain a lot of roughage which helps with constipation. Carrots also contain Vitamin C, most of the B-complex vitamins, calcium, potassium, iron and phosphorus.
CUCUMBERS - Cucumbers are high in potassium, sulfur and manganese which are beneficial to complexion, hair and nails. They are a digestive aid and have a purifying effect on the bowel. They have a cooling effect on the blood, hence the term "cool as a cucumber."
PARSLEY - Parsley is rich in chlorophyll and parsley juice purifies the blood by metabolizing oxygen in the bloodstream. Parsley is a source of vitamins and minerals including beta-carotene, choline, magnesium, potassium, sulfur, iron, and calcium. Parsley also contains agents that act as scavangers against free radicals.
CELERY - Celery is high in phosphorus and potassium and is beneficial to the lymphatic, nervous, and urinary systems. Celery juice is an excellent headache remedy and has restorative powers by replacing depleted liquid and natural sodium supplies. Celery maintains the body's pH factor, combats stomach ulcers and aids against breast cancer.
